At Crisp, low color malt (Extra Pale) is also malted, in the Maris Otter® barley version. This was originally developed for brewing pale beers for traditional breweries, where a higher level of modification is required for effective extract delivery and good brewhouse performance. Its light color also makes it suitable for light continental styles.
