Cascade is a dual-purpose hop that can be used in all hop additions throughout the brewing process.
This hop, characterized by its citrus and often specifically grapefruit flavor, makes up about 10% of the hop harvest in the USA. Cascade also has medium-intensity floral and spicy citrus characteristics. When used as a bittering hop, it imparts a moderate bitterness. It is most famous as the finishing hop in Sierra Nevada Pale Ale, which is considered the beer that started the IPA and hoppy beer craze.
