WildBrew Philly Sour is a wild strain of the genus Lachancea, isolated from nature at the University of the Sciences in Philadelphia.
In a single fermentation step it produces a moderate amount of lactic acid alongside ethanol: the beer sours and ferments at the same time. The result is crisply sour beers with stone-fruit notes.
High attenuation, high flocculation and good foam stability make it a great choice for Berliner Weisse, Gose or American Wild Ale; thanks to its hop tolerance it handles Sour IPA too.
