Rakau is a New Zealand dual-purpose variety with a stone-fruit profile: fresh apricots and figs with lightly resinous pine needles.
You can use it across the whole boil: from the first hop addition to the dry hop.
It suits Pale Ale and IPA, bringing fruit character beyond the usual citrus.
