Lallemand CBC-1 Yeast for Secondary Fermentation

CBC-1 is a strain selected specifically for conditioning in bottles and casks (Cask & Bottle Conditioning: hence the name).
Thanks to its high tolerance of alcohol and pressure it referments beers up to 12–14% vol.; its flavour is neutral, so the original character of the beer stays unchanged.
It does not metabolise maltotriose during primary fermentation, which also makes it a good fit for sweeter fruit beers, full malty beers, mead or cider. It can be used for primary fermentation too: for example in Champagne-style sparkling beers or dry ciders.
Fermentation: fast. Alcohol tolerance: 12–14% ABV when conditioning beer; with cider, mead or hard seltzer it tolerates up to 18%.
