Lallemand LoNa Yeast

LalBrew® LoNa™ is a maltose-negative hybrid strain selected for its ideal properties in producing low-alcohol and non-alcoholic beers. Advanced methods of classical and non-GMO breeding were used to develop a strain that does not consume maltose or maltotriose, resulting in very low attenuation. LalBrew® LoNa™ is the first maltose-negative strain of Saccharomyces cerevisiae specifically selected for beer fermentation. As an S. cerevisiae strain, LalBrew® LoNa™ behaves like an ale yeast, producing a clean and neutral aroma profile, no phenolic flavors, and significantly reducing aldehydes responsible for worty off-flavors. Additionally, patented technology from the University of California, Davis (USA), ensures the strain does not produce sulfuric off-flavors, allowing the malt and hop flavors to shine.
