WLP079 Suava Ale Yeast is a new White Labs strain for modern hop-forward beers, developed together with Escarpment Labs and Lallemand Brewing. It was selected and refined for balanced thiol expression: it releases white grape, blackcurrant and tropical fruit aromas from the hops and further enhances hop character through biotransformation. The beer profile stays soft and balanced, suited to juicy, drinkable beers.
The parent strain comes from Norwegian farmhouse yeast of Upper Telemark. Suava was refined by adaptive laboratory evolution, without genetic modification. It ferments reliably and completes primary fermentation in 6 to 10 days depending on temperature. Haze positive, STA1 negative.
