Phoenix is a dual-purpose hop that can be used in all hop additions throughout the brewing process.
It was bred as a hardier replacement for Challenger and comes from the Yeoman variety. It is primarily used at the beginning of the boil for classic English ales, but also for darker styles such as porters and stouts.
