Lactic acid (80%)

Lactic acid 80% is used to adjust the pH of the mash and wort.
It quickly brings the pH into the 5.2–5.6 optimum. The actual mash pH only settles 5–10 minutes after mashing in. That is the time to correct it; the grist itself and brewing salts also affect pH.
Dose in small steps and keep measuring; the amount needed varies with the water and the grist.
