Calcium sulfate (gypsum, CaSO₄) is a brewing salt for adjusting brewing water.

Sulfates accentuate a dry, crisp hop bitterness; calcium supports mashing and slightly lowers pH. A higher sulfate-to-chloride ratio is typical of West Coast IPA and bitter beers.

Dosed into the brewing water according to a water analysis and the target profile of the style.
