Product detailed description

ALDC (alpha-acetolactate decarboxylase) is an enzyme from Bacillus licheniformis.

It breaks alpha-acetolactate straight down to acetoin, so no diacetyl (buttery off-flavour) forms in the beer. The diacetyl rest is no longer needed and maturation gets shorter.

The usual dose is 10–15 g/1,000 l; it is added to the cold wort at the start of fermentation.
